Alessandro Viola 50 Gradi All’Ombra is a late harvest dessert wine from Alcamo, Sicily, made from 100% Grillo grapes. Grown at 220 meters altitude on clayey soils in Contrada Pietra Rinosa, the grapes are harvested manually in late September after drying on the vine during Sicily’s intense summer heat. Fermentation occurs spontaneously with indigenous yeasts in stainless steel tanks, followed by twelve months aging. Bottled unfiltered and unfined with minimal sulfites, this organic wine contains 80 grams per liter residual sugar balanced by natural acidity, presenting a full-bodied profile.
